« The sweetness of rosés »
In the early 2000s, Jean Pierre felt the wind blowing towards new colors. He experimented for several years to perfect the vinification of a new wine, Parenthèse Rosé.
Merlot and Cabernet Sauvignon in equal parts blend wonderfully during long vinifications at low temperature, revealing notes of citrus, yellow fruits and English sweets.
The harvest is done early in the morning to press fresh grapes for ever lighter colors.
Parenthèse Rosé was born from Jean-Pierre's intuition: creating an atypical rosé, combining roundness and tension through long vinification at low temperature.
