Innovation shakes up traditions with the arrival of Parenthèse Blanc de Noirs. As its name suggests, this white wine is made from black grapes, specifically a majority of Cabernet Sauvignon and a touch of Merlot. Freshness and minerality remain, thanks to the vine’s rooting in clay-limestone terroir. Only the first pressed juices are kept to obtain an atypical aromatic profile and a color of great purity. To perfect its balance, this white is vinified/aged in wood, with part of the malolactic fermentation carried out, bringing complexity and smoothness.
Parenthèse Blanc de Noirs breaks the codes: a white wine made from black grapes. Audacity in the service of elegance.
